OUR PHILOSOPHY



Our philosophy and aim is to develop high quality wines with unique characters. This is achieved through a thorough and tireless effort to care for our vines. We are convinced that the best quality wine can only be obtained by harvesting perfectly healthy and ripe fruits.

We monitor our wine continuously in the cellar during production, maintaining minimal intervention so that the terroir imparts unique qualities to our wines.

proximity of the Mediterranean Sea.
Soil: Clay-limestone
Vineyard: Organic vineyard for 71 years; conducted
in traditional goblet pruning without irrigation.

WINEMAKING
Grapes are exclusively harvested manually in 15 kg crates. A first selection of the grape bunch is carried out in the vineyard and only mature grapes are picked. A second selection is carried out at the ageing cellar prior to treading and
destemming. The cold skin maceration lasts for 4 days and is followed by the fermentation using autochthonous yeasts for 4 days in temperature-controlled stainless steel vats. The elevage is carried out in French Oak casks and amphorae for 7 months. This wine is non-clarified; non-filtered; naturally stabilised and very little sulphites added. Cuvée limited to 2000 bottles.

DEGUSTATION
The robe is deep red with nuances of purple. The nose is fresh with hints of black fruits and a light toasted smell. Full-bodied wine with a fresh and fruity mouth and a long finish.

FOOD AND WINE PAIRING
Ideal for pairing with stewed meat and gravy, red meat, paella or hard cheese. Serve at 18ºC.

TASTING NOTES This wine has a cherry red colour. The nose is pleasant with hints of red fruits including cherries, raspberries and strawberries. The mouth feels very elegant and fruity with very soft tannins and a slight acidity which confers this wine its freshness. Medium-bodied.

FOOD AND WINE PAIRING Perfect accompaniment for starters, salads or white meat. We recommend trying it with paella and lobsters. Serve at 18ºC.

THE VINEYARD



Our vineyard has belonged to the family for centuries and organic farming practices have been used for decades. The vineyard is in the village of Los Pedrones (Requena) located north of Valencia, Spain. Due to its unique position, roughly 70 km away from the Mediterranean sea and at an altitude of 700 m, the village benefits from a continental climate with very clear seasons which are cold in winter but warm and dry in summer, tempered by the proximity of the sea.

This unique location creates a large variation in temperature between day and night in summer, conferring a certain freshness to our wines.

Although our vineyard spans over 18 hectares, we have chosen only specific plots planted with old vines, some of them over 70 years old, cultivated without irrigation and trained using goblet pruning (a traditional and ancient way to train vines). These vines give very low yields but produce fruit of outstanding quality.

Our vines are planted in clay-limestone soil which confers subtlety to our wines.

We only use three grape varieties in our vineyards: Grenache, Bobal and Tempranillo


HISTORY



The ageing cellar was built in the early 20th century by Silvia’s great grandfather, DionIsio, and was used for several decades until the creation of the wine cooperative of Los Pedrones. The cellar was later used as a shed to store machinery and at certain times of year to dry almonds produced on the farm. This was the case until early 2017, when our refurbishment works then gave a second life to the building.



Together with the architectural company CRUX, we envisioned a new version of the cellar, and their work rendered it outstanding. They designed a central area with access to three levels of the building, providing us with the most efficient use of space.
The cellar is also equipped with a central lift that allows us to use gravity for smooth and delicate racking operations without the need for pumping.

To retain its visual beauty we have preserved as much of the old cellar as possible, whilst incorporating the newer materials required to meet sanitary regulations. The result is a building where modernity and tradition coexist harmoniously, to give a pleasant atmosphere filled with history.

OUR WORK IN THE CELLAR



As harvest-time approaches, we taste the grapes several times a week to ensure that they meet our quality criteria. In addition to tastings, we also measure several parameters such as grape sugar content, acidity or pH.

Harvesting is only carried out in the morning to ensure that when the grapes start the vinification process they are as fresh as possible. We exclusively harvest manually in 15 kg crates, selecting in the vineyard only those grapes which are perfectly mature and healthy. In the afternoon we begin the winemaking processing with a second selection step in the cellar to remove all parts of the grape bunch which do not meet our rigorous quality requirements.

Vinification is done on each of our grape varieties separately, preserving their special character. After treading and destemming, the juice is fermented with autochthonous yeasts in temperature-controlled stainless steel vats.

Daily tastings allow us to determine the optimum maceration time and therefore the best moment to transfer the juice into barrels and amphorae where the alcoholic fermentation proceeds first, followed by malolactic fermentation.

The high quality of the selected grapes and the meticulous work in the cellar means we don’t use chemicals at any stage of the winemaking process until bottling. To guarantee good preservation and evolution of the wine in the bottle we then add a very small amount of sulphites just before bottling.


OUR STORY



Everything began back in 2002. I was finishing my studies in Lyon, France, and decided to spend my last year at the Polytechnic University of Valencia, Spain. Thus, in the early days of September, my parents Cecile and Alain, helped me move from my hometown in the Ardennes to Valencia.

 
During this incredible year I met Silvia, and together we started a journey that led us through different parts of France. The time we spent in Burgundy and Montpellier marked us forever; we developed an increasing passion for wine.


In 2016 while living in the charming little village of Cournonterral a few miles from Montpellier, the idea of a career in wine production started germinating in my mind. One autumn day when we were visiting my father- and mother-in-law Roberto and Fina, we made the decision to leave our jobs as a math teacher and works engineer in France, to take over the family farm and begin our new life as wine producers.


At the start of 2017 we refurbished the old family cellar, and in September of the same year we began production of our first cuvée.
